Sweet Potato Soup and Cheddar Biscuits
When the weather is this cold, nothing tastes better than soup! I tried this recipe for the first time this week and I'll be making it again for sure! It was so delicious...and so were the biscuits. Yum.
Sweet Potato Soup
one large onion
one large sweet potato
2 tablespoons olive oil
one can black beans
one can diced tomatoes
2 cups veggie broth
1 teaspoon cumin
salt and pepper to taste
Peel and dice one onion and one large sweet potato. Saute them until tender in a large skillet with the olive oil. Transfer to a crock pot and add all the other ingredients. Cook on low until the potatoes are soft. Enjoy with biscuits or crackers.
Cheddar Biscuits
2 cups Heart Healthy Bisquick Mix
half a stick of butter
half a package of shredded cheddar
Put the butter in a glass mixing bowl and melt it in the microwave. (Mine takes one minute.) Add two cups of biquick and mix well. Add the cheese and mix until incorporated. Using a medium scoop, place the scoops of batter on an ungreased cookie sheet and bake in a 375* oven for 9-10 minutes or until just beginning to get golden on top. Enjoy them while they are HOT.
