On the Road again...
My bags are packed and I'm travelling north today! I'm going to visit the Misty Mountain Quilters a couple hours away. They are a talented group of quilters (and I know this because I go to their show every two years and it is impressive!) I'm looking forward to my time with them and I have my fingers crossed that I will be back in time to pick the kids up from track practice and get Kelly to the barn before her riding lesson. Never fear, I'm putting some sweet potatoes in the crock pot before I leave so we will have a hot and tasty dinner when we finally get home. If you want to try them, they are super easy...
Crock Pot Sweet Potatoes
4-6 large organic sweet potatoes
butter
brown sugar
chopped pecans
Wash the potatoes and wrap them individually in tin foil. Put in crock pot on high for 1-2 hours, then switch to low. To serve, unwrap the potatoes, split them and squish them open, then top with butter, brown sugar, and chopped pecans. Serve with a green salad or steamed green veggies.

Have a good trip Diane, I am jealous, I wish I could go there as well! Pictures expected! And thanks for the recipe. Sweet potatoes are seldom here and expensive, I only did once a puree and it was so good!
ReplyDeleteThanks Christine, it was a fun day. We love sweet potatoes and I actually found some huge ones at the farmers market this week. They tend to be small and can be hard to find, so I felt very lucky to find them this time of year. Yum.
