Crockpot Corn Chowder Recipe



This recipe is so quick and easy it should be a 10 minute tip!  I've shared other soup recipes and other crock pot recipes before, and I always get lots of questions, so I'm going to try and be very thorough today, but feel free to leave questions in the comments if you have any!

Crockpot Corn Chowder

1 bag of Frontier Soups Corn Chowder Mix (frontiersoups.com) seasoning
1 bag of frozen corn
1 bag of shredded or diced potatoes
1 box of vegetable stock (or chicken stock)
2 cups of water
1 small carton of heavy cream
shredded cheese for serving
salt and pepper to taste

Turn the crock pot on low and add the all the ingredients except the cream and cheese. Stir to mix. Cover and cook on low all day, adding the cream 30 minutes to an hour before serving.

Sprinkle shredded cheese on top and if using vegetable stock, add salt and pepper. If you use chicken stock it may not need additional salt and pepper.

Serve with cheese quesadillas or grilled cheese sandwiches for a hungry crowd (I have 3 teen athletes who are always HUNGRY!)

Note: Typically I use all organic ingredients, but I was in a hurry and only wanted to make one stop. The soup mix can be found in the natural section of the store. It turned out yummy anyway!
