Lemon Squares and fabric squares

I hosted my bee group today and we had fun stitching and visiting as we always do. We also always have lunch together. I served a super easy Hawaiian Chicken with roasted asparagus and fresh fruit. But the best part of the meal was dessert. I made my mom's recipe for Lemon Squares and they were a huge hit. The kids were more than happy to finish off the leftovers.

Lemon Squares

Preheat oven to 350.
1 cup unbleached all purpose flour
1/2 cup butter, soft
1/4 confectioner sugar
Mix and press into a buttered 9 x 9 pan.
Bake 20 minutes.
While the crust is baking mix...
2 eggs
1 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons fresh squeezed lemon juice
Pour over hot baked crust.
Bake 25 minutes.
Serve with a dusting of confectioner sugar.

These can be made the night before if needed.

  2. I also belong to a quilting "bee" which we call the Wednesday Stitchers. We eat lunch out and then meet to sew, knit and gab. Really enjoy the time we spend together.
