Banana Muffin Recipe
Banana Muffins
Preheat oven to 350
1/3 cup oil
1/2 cup sugar
2 eggs
1 3/4 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
2 ripe bananas, mashed
chocolate chips (optional)
Mix the first 3 ingredients with a hand mixer until well blended.
Sift together the dry ingredients and add to the mix, stirring until well blended.
Add the bananas (and chocolate chips) and mix until smooth.
Line muffin tins with paper liners.
Drop medium scoop of batter into each.
Bake 15-18 minutes.
Makes 12-15 muffins.
If making mini muffins, reduce baking time.
This was the first food item my daughter requested upon returning from college this summer. She loves the muffins with chocolate chips. If she's not around, I don't add the chips. They are yummy either way!

ReplyDeleteThank you for this recipe. We eat a lot of bananas but every once in awhile some get too ripe for my family to eat (they are picky bananas eaters)! I usually make banana bread but muffins will be a nice change.
ReplyDeleteI made a double batch today! Some with nuts and chocolate chips. Some without. They are really good! Thanks for recipe! I also made biscotti and Molasses Crinkles cookies. I tend to bake in large batches and not very often. It's the holiday so I will have sweets for grandkids!
ReplyDeleteI just stumbled onto your blog by accident and love all that you do. I made these banana muffins earlier and they are wonderful. The batter but very thick so I added a few tablespoons of buttermilk to thin a little and they were perfect. I put them in 4 paper mini pans so now I can eat half and share half. Thank you so much for sharing this recipe.
